Millet morsels: A market survey of finger snacks in Meerut and Modinagar bakeries

Abstract:
The present study examines the availability of finger snacks made with millets in twenty bakeries and confectioneries across Meerut and Modinagar. With rising consumer health consciousness and government promotion of millets as a “smart food” [1], understanding their commercial uptake in urban baked goods is essential. We employed a mixed-methods approach surveying 20 outlets in Meerut and Modinagar and conducting in-depth interviews with proprietors to assess product offerings, pricing, sales performance, and perceived barriers. Results indicate that only few of outlets offer millet-based finger snacks, predominantly as cookies and savory crackers. Key obstacles include inconsistent raw material supply, higher production costs, and low consumer awareness. Recommendations include standardized millet flour blends, targeted marketing campaigns, and partnerships.
